Shelina’s culinary creations are a reflection of her rich cultural heritage, combining fresh, bold ingredients in ways that tell a story. Her visit to Summer Island was no different. Together with our chef Satyendra, Shelina designed a Maldivian-inspired verrine — a dessert that highlighted the natural flavours of the Maldives while adding her signature twist.
The verrine featured a delicate balance of creamy coconut, refreshing sago, aromatic pandan, and earthy taro, complemented by sweet, sun-kissed mango and banana, with a burst of zesty lime, creating a medley of textures and flavours that delighted the senses. This lush dessert was the perfect centrepiece on our Christmas menu, bringing together festive spirit with the vibrant, natural beauty of the islands.
Shelina’s collaboration with our culinary team was a celebration of culture, creativity, and the joy of bringing people together over shared experiences.
